{Recipe} Black Bean Pizza

In a effort to get my boys to expand their food horizons, I thought I would try a different version of one of their favorite foods, pizza!
Black Bean Pizza
Ingredients:
black beans (I made these from scratch, recipe will follow)
tortillas (Thing 3 and I made our own following {this recipe})
chesse (we used monterry jack)
onion
tomato
bell pepper
Directions:
1. Mash the black beans.
2. Spread the black beans onto a tortilla.
3. Top with cheese and any other toppings.
4. Warm up pan at medium to high heat.
5. Place tortilla with everything on top, into a pan for approximately 8-10 minutes or until the cheese is melted.
6. Enjoy!
This is a simpe meal that the kids can help me make. I served ours with some mango yogurt (2 cups yogurt, 2 mangos, put it in a blender).
Crock Pot Black Beans
Ingredients:
2 Cups black beans, rinsed and drained
6 cups water
1 Tbsp. salt
1/2 medium chopped
1 tsp. garlic salt
1/2 Tbsp. chili powder
1-2 jalapenos
1/2 tsp pepper
Directions:
1. Put all the ingredients in the crock pot and turn slow cooker on low and cook for 6 to 8 hours. My slow cooker tends to cook warmer, so you may need to turn the heat up a little.
2. When finished cooking, drain the water and enjoy. Or if you are mashing your beans to make the recipe above, put them in a large bowl and squish them with a fork or potato masher until you get the desiered consistancy.
