{Recipe} Honey Banana Bread Mini Muffins

Over the last few weeks I have been on a quest to find easy, healthy, make ahead snacks that I can quickly give the boys.  This weekend I made a honey banana bread mini muffins for the boys to test out.

Honey Banana Bread Mini Muffins
Yield: 36 mini muffins

2 Cups Whole Wheat Flour
1 teaspoon Baking Powder
1/4 teaspoon Salt
1/2 Cup Butter, melted
1/2 Cup Honey
2 Eggs
4-5 Bananas, mashed

1.  Pre heat oven to 350 degrees.
2. In a large bowl, combine flour, baking powder, and salt.  Mix well.
3. Add melted butter and honey to the mixture.  Mix well.
4. In small bowl, mash bananas with a fork until they are the size you want.
5. Stir in bananas into the flour mixture. Stir mixture until everything is moistened.
6. Spoon mixture into greased muffin pan.
7. Bake 15-20 minutes.
8. Enjoy!

The muffins were a winner with all three boys.  Which is rare since each boys has different food dislikes.   I really enjoyed them because they were really moist compared to some of the other muffins I have made.


Basic Granola Bars

In an effort to have some quick, easy and healthy go to snacks ready for the boys, last weekend Thing 2 and I mades some super yummy granola bars.  These granola bars were such a success that Thing 2 wanted to only eat the granola bars for 3 days stright.  These a super basic, which makes it the perfect bar to add in any dried fruit you could imagine.

Basic Granola Bars

2 Cups Rolled Oats
3/4 teaspoon ground cinnamon
1 Cup Flour
3/4 teaspoon salt
1/2 Cup Honey
2 teaspoon Vanilla
6 Tablespoon Butter, melted
1-2 cups of your favorite dried fruit.  (The amount depends on the size of the fruit.)

1.  Pre heat oven to 350 degrees.
2. Grease 9 by 9 inch dish.
3. Mix together rolled oats, ground cinnamon, flout, and salt.
4. Make a well in the center and add honey, butter and vanilla.
5.  Add whatever dried fruit you want to the mixture.
6.  Pat mixture into pan.
7.  Bake 20-25 minutes.
8.  Cool 5 minutes and cut into bars.


{Recipe} Guacamole!

I love guacamole.  It is probably one of my most favorite foods ever.  Over the years I have slowly been working on my guacamole recipe.  It has changed several times over the years, so I thought I would share my most recent recipe.


3-4 ripe avocados
1/2 medium tomato chopped
1/2 medium onion chopped
1/2 to 1 whole jalapeno chopped
1 Tbsp lime juice
salt (to taste)


1. Pit and peel the avocado and put it in a bowl.
2.  Add the tomato, onion, jalapeno and lime juice. Then squish, mash and mix everything together.
3.  Add salt to taste and enjoy!

Paper Bag Popcorn

I didn’t believe this recipe when I first read it, but it works.  You can make “naked” popcorn in less than 2 minutes without an air popper.

1/4 cup of corn kernels

1.  Place 1/4 cup of corn kernels in the bag.
2. Fold over the top of the bag.  You can use tape if it makes you feel safer. 🙂
3.  Microwave until there is 2-3 seconds between popping.  In our microwave it takes 1 minute 25 seconds.

You can top with whatever you desire.
